Rejoice cos it's the holiday!

What do I like about my job?

When kids have their holiday, I get my fair share too :)

Couldn't really recall where I went during the holiday. Just many meet ups with my friends! Work is so hectic and I really appreciates when friends take time off just to catch up with each other.

My colleagues and I make it a point to end each term with a good meal to reward ourselves. We call it the M.G.S. haha. Headed to The Marmalade Pantry at ion this time round. I always head back for the same food whenever I head there for a meal. Their crabmeat linguine never fails me. Pardon the lousy photo quality cos they were taken using my phone.

This is probably less than a quarter of what we ordered. Hahaha most of us opted for the crabmeat linguine and the rest were too far away from me. We were so busy chatting, none of the seven of us bothers to take a picture of us together.

And probably only the apple pie deserves a solo shot on its own cos it looks so good! The food is pretty normal in my opinion but it is quite hard to find a decent place for an afternoon tea in town, so probably it explains why it is so crowded all the time.

Met WC for dinner after my gathering. How can I not get fat at the rate I am eating? :(
My poor boy waited for me at PS cos we agreed to watch a movie together but I fell asleep at home. So he made a trip down to my place and pick me up before we went for dinner and catch the next movie available.

Dinner at my favourite Thai Express! Their Seafood Fried Kway Teow never fails me:)

Doesn't look like it but it's soft shell crab. Too oily for my liking.

Decided to try something new but this has got to be the worst! Can't exactly remember what is written on the menu but it's basically tau gua with some prawns on it. $8 for a piece of tau gua! :(

Check out Paradise Dynasty with sis on Saturday. A heavily raved place but I hadn't tried it before. Since sis has some craving for Chinese food so we went ahead and try there! Thank god we went for an early lunch, the queue outside was crazy by 1pm!

Of course we have to try this when we are here! The colourful xlb makes us really happy!

Sis and I decided not to see what flavour each colour represents and eat random selection of xlb. Cheap thrill but we did have a good laugh over the flavour we got.

The noodles taste rather normal. I was just impressed with the gigantic bowl! Two bowl of noodles and the xlb is too much for two of us to take!

The signature pork bone soup noodle

Pardon the sleepy face. Think we were mad to go shopping early in the morning .

Did a meet up with my favourite girls last week but decided to do it on a separate post cos it's gonna be a looong post! Enjoy the rest of the weekend! it's Monday again tomorrow! :(

Bak Kwa Muffins

Copied this from my other blog so that I can close down the other blog. Keep everything here.. Who knows? I might decided to make some bak kwa muffins again someday! :)

Decided to make use of what's left in my fridge to bake something today.
And guess what I found? BAK KWA!

This is really easy to make and not much ingredient is needed.

My favourite bak kwa cut into strips.
 Then into mini cubes!

Whisk the eggs and the sugar together.

Till bubble starts to form like this.

Gradually add in the rest of the ingredient. Fold gently till all the ingredients are mixed evenly.

Put them into muffin cups till about two-third full.

Send into the oven!
Bake for about twenty minutes at 200 Degree Celsius.

T-A-D-A!!

These muffins taste rather good in my opinion. Surprisingly not too oily.
I am not really a fan of muffin cos it usually taste a little too oily and dense, but this is rather light :)
Shall experiment with other ingredients the next time round!

Noms noms

Good food makes us happy. I just realise my recent photos are all on food places that we have not tried before. I correct myself: New and good food places make us happy. Haha.

Headed to Illuma+ for dinner after work one day. Steamboat seems to be the best choice cos we were both so hungry and the weather makes it perfect for a steaming hot meal. We walked past Suki-ya a few times but was apprehensive to try cos the grey pot they served the food in does not look appetizing. Decided to give it a go since we were too tired to walk over to the Liang Seah Street for our usual steamboat.

They have instructions for you to mix and match your sauces. I love love the Miso Tare.

I think we were too hungry from the waiting and got caught with such awkward and ugly (me!) expressions. Haha.

See that grey pot? Haha. I think my picture has beautify it abit.

Wanted to try the herbal soup but it is only available on weekends:( The meat was good. I love fresh and thinly sliced meat that allows me to shabu-shabu. However, the variety was quite limited for the 50 bucks we paid for two.

Another picture of the meat cos I love it!

We decided to have an ice-cream designing competition to see who can do up a prettier ice-cream. Hahaha but our end product look so similar we have to call it a draw!

The weekend was good. Spent the whole day slacking at WC's place. Due to work, it is only till weekend where we get the luxury to bum around and enjoy each other's accompany. Watching teevee, playing ipad, sometimes, even not doing anything seems like the best way to enjoy my weekend with his company:)

Headed to Bottle Tree Park cos we are bored of the usual shopping date.

The place is more rundown than I imagined it to be. Three ponds for fishing, prawning and catching long-gao fish.
Spot the flexible prawner.

It is quite cute to see the children chasing after long-gao fishes a.k.a guppies until I saw a squashed guppy on the ground. Think the kids accidentally stepped on it in while trying to scoop all their catch in their mini tank to bring home :(

What's bottle tree park without a bottle tree? WC was saying it would be better if they have a row of such trees to make it more iconic. But guess it will be quite expensive to maintain in a free park like this?

The food variety was quite restricted. Just a Japanese restaurant, a seafood place and a small bistro. We decided to move on to another place since I see dead fishes amongst the fresh seafood.

Headed to Northpoint. It had been eons since I stepped foot here. The last time I came was with YH and Yuli where we went for fortune telling. Haha. Decided to try something different since we had come all the way to the North..

We were quite impressed with the food that we decided to google to see if they have other branches available. Sad to say, not for not NEL-ers, cos they only have one other branch at Bukit Batok :(

Something different for a starter. The Chinese Kimchi! *Yums*
My favourite dinner companion:)

2 satisfied customers!

Today marks the start of my holiday! Finally a good 3 day break to myself! woooo~

Happy Birthday Danjakk!

Finally my rainbow cupcakes are done!

A trial with the super duper tedious rainbow cake and two rounds of experimenting with rainbow cupcakes, I can say I am quite proud of my final product *beam with pride*.

So far, those who have tasted it likes it.. Soft and spongy and not too oily (shall share a little revision I did to the recipe later on)

For the cupcakes (I changed the proportion cos I only needed to make 12):

Rainbow Cupcake:

Serving size: 12

I was lazy to use my usual cupcake recipe so decided to go instant this time round. The instant mix requires just oil, water and eggs, but I changed the propotion and it tasted even better :)

For the cake:

1 yellow cake mixture
3 eggs
1 cup Meiji yoghurt (I chose the strawberry flavour)
50 ml vegetable oil
125 ml water
Food colourings

Frosting (adapted from Selene Zhang ):

150ml fresh milk
1 tbsp plain flour
150 g butter, leave it at room temperature
120 g sugar

It is pretty similar to how I made the rainbow cake. Divide the batter into 5 portions and add in food colouring to achieve the desired colour.

Starting with the blue batter, add in about 1 tablespoon into the muffin cups. Repeat the procedure with the green, yellow, orange and red batter. Allow the batter to spread on their own in case it breaks into other coloured layers.

Set to bake at 175 degree celcius. It is done when a toothpick is able to come out cleanly when we poke it through the cupcake.

While the cupcakes are baking in the oven, we can start preparing the frosting for the cupcake.
Whisk the flour and milk until well combined in a non-stick pan. Place over medium-high heat and cook the mixture until it starts to bubble and turns into a thick paste. Stir occasionally and make sure the mixture does not burn. Leave it to cool to room temperature.
Cream the butter until it is smooth and creamy. Gradually add in the sugar and beat till light and fluffy. Add in the vanilla extract and mix well.

Reduce the speed of your mixer to low and add in the milk/flour mixture. Increase the speed to medium high and beat the frosting until you see that it is gradually turning whiter and well combined. Refrigerate the frosting for 15mins (no more, no less!) and use immediately.
I used the piper I got a piper from Daiso and it works perfectly well!

Anyways, the cupcakes is for the best friend who is getting married next year:)

Wanted to make something special yet meaningful so rainbow cupcake it shall be! And it turned out that it was her wish to get a rainbow cupcake for birthday! What a coincidence!

A close- up shot of the cake

Love the bright colours! :)

Surprise visit to her house on the Saturday morning and she was all dressed up to go out! Luckily we liaised with Cornelius before that!

Happy Birthday danjakk! Hope you love your surprise! <3<3
